Chicken Parmesan over Spaghetti Squash Spaghetti

Place the spaghetti squash in the oven to slowly roast. Spread the tomatoes on a baking sheet and bake until they melt into each other and become saucy. Pound the chicken and bread it while these bake. Sear or bake the chicken under high heat. Bring a large pot of water to a boil. Assemble the chicken with the marinara on top and below each fillet. Place in the oven to finish baking together. Boil the pasta. Allow the squash to cool slightly before scooping out. toss the spaghetti squash with the pasta. Serve the Chicken & Marinara over the Spaghetti Squash Spaghetti.

Spaghetti Squash Spaghetti

Or maybe call it Spaghetti Spaghetti Squash? Either way, tossing strands of spaghetti squash with strands of whole wheat or brown rice spaghetti makes both of them taste that much better. Serve this dish anytime a meal calls for spaghetti or spaghetti squash.

Marinara- Oven Roasted

Do you have an abundance of fresh tomatoes that are a bit too soft for salads? Toss them in a roasting pan with a few extras and roast until it all becomes soft, caramelized and tantalizing. If you have any bell peppers, mushrooms or other veggies laying around, chop them up small and toss them in too. Don’t have have time or the harvest of tomatoes? Try the Quick Marinara instead.

Chicken Parmesan

This classic Italian dish is an absolute favorite of in our family. We change up the sauces, so this recipe is only the Parmesan breaded chicken. There are directions for baking or pan-frying. While a slice of mozzarella melted on top is common, we find the parmesan & breadcrumb crust is plenty. Bake this with an oven roasted homemade or your favorite store-bought marinara.
