Chili is perfect for any Superbowl, but served alongside the Cauliflower Cheesehead makes it just right for a Packers party. Make this dish perfect by using the finest Wisconsin Cheddar.
Once the chili has begun to simmer, toss the cauliflower in the oven. They will be done together- in time for kick off.

Vegan? The chili is vegan just try our recipe for the Simple Cauliflower Roast instead.

Meat lover? Just saute your favorite ground meat or sausage and simmer along in the chili.

Cauliflower Cheesehead

This is dedicated to all of the Green Bay Packers fans out there— several of whom I am related to. I am not really a Football fan, but I am crazy for cauliflower, especially roasted. This technique involves roasting the whole head and then flipping it over stuffing it with cheese and roasting until the cavity is coated in melty goodness. I use cheddar, but use your favorite… especially if it is from Wisconsin.

Toss in any winter vegetable lying around taking up counter space, we use beets & carrots, but squash, sweet potatoes, roots, and greens can all be diced up small and mixed in. Shop around your kitchen and play with this recipe to use up any odds & ends.
