Clams with Tomatoes and Baby Greens Pasta Salad

Bring a large pot of water to a boil. Wash and dry the baby greens. Chop the tomatoes, basil and garlic. Cook the pasta. Prepare the ingredients for the clams and cook. Drain and cool the pasta. Toss the pasta. Serve the clams and tomatoes on top of the pasta salad with a drizzle of the clam liquid.

Baby Greens Pasta Salad

More greens than pasta are tossed with a simple vinaigrette. Mix and match your baby greens and fresh herbs as available. Traditional basil works well, but any other variety such as Thai basil or lemon basil can work nicely too. Add more veggies, nuts or cheeses to liven it up or just leave this as simple goodness.

Fresh Clams

Fresh clams are charmingly simple to prepare. Purchase the best, happiest looking clams you can find. Ask your fish monger where they came from. Currently the best choices are farmed clams as they are produced in a sustainable manner.

Pulling the clams out of the hot pan is easiest with tongs, but two large spoons “tonged” together can work as well.
