Coffee Rubbed Chicken and Melon & Cucumber Salad with Black Pepper Granola

Prepare the granola well in advance, it takes a few hours in the oven. Once the granola is prepared the rest of the meal takes under 30 minutes. Prepare the veggies for the salad. Make the coffee rub. Season the chicken and grill. Make the dressing and assemble the salad while the chicken grills. Serve the salad with a sprinkle of the Black Pepper Parmesan Granola on top and the chicken alongside.

Black Pepper Parmesan Granola

A savory twist on a sweet morning breakfast. Honey still adds a reminder of sweetness, but lemon, parmesan and black pepper stand out to make this distinctive granola rather addicting. Substitute more oats for the rice puffs, but try to use them if possible, because they absorb so much or the flavor and give a delightful crunch that is not to be missed.

Cucumber & Cantaloupe Green Salad

Summer sweet melons and crispy cucumbers are tossed with a Lemon-Lime Yogurt Dressing. Goat cheese and pistachios add another element, but are each optional. The citrus zest makes the dressing delightful, but if you are without a microplane or fine grater, no worries, the juice is more important.

Spicy Coffee Grilled Chicken

Grounds from your favorite morning beverage are spiced up, coated on to chicken and then grilled. Taste the seasonings before you shake them on the chicken. Adjust as needed. We like bone-in chicken, but if you prefer boneless, skinless that works too. The sugar gives it a slight caramelized crust, but can be omitted if you prefer.
