Crepes with Strawberry Frozen Yogurt

1. Make the crepe batter, set aside to rest and combine the strawberries and honey— these can be done in advance, up to overnight.
2. Place the strawberry mixture in an ice cream maker.
3. While it runs, sear up all of the crepes.
4. Roll up the crepes with frozen yogurt in the middle.

Strawberry Frozen Yogurt

1-2-3 ingredients. Seriously. Make it as sweet or as tart as you like. It is so similar to our morning yogurt ritual, that we see no reason to not enjoy this for breakfast. Or after dinner. Or a mid-day snack. Or midnight snack. The trick is Greek or strained yogurt. Which is easy to make* if you can’t find the greek kind, just plan to buy twice as much yogurt and have a coffee filter or cheesecloth handy.

There is something slightly intimidating about making crepes, but the batter is simple and the rest is just a bit of technique. I always plan to make a few ‘mistake’ crepes to enjoy as a snack (chef’s treat!) to make sure I have added enough salt or butter to the batter. If they are sticking to the pan, try a non-stick pan or add more butter before you pour in the batter. The recipe serves only two or just one hungry dude, so use this as a starting ratio to double, triple or increase as needed.
