Simmer the split peas and make the spread- it will last for about a week for many lunches and snacks. Bake the crackers. Make the dressing and slice the vegetables & fruit for the salad. Package everything separately, including the dressing and cheese for the salad, to take on the go. Assemble just prior to eating.

Split Pea Spread

Split peas are brightened up with lemon and depth is added with walnuts. This spread is a great alternative to hummus or bean dips for crackers, sandwiches, or cut up veggies.

Fennel Crackers

Just a hint of fennel and glistening flakes of kosher salt, liven up these simple whole wheat crackers, inspired by Heidi Swanson’s Olive Oil Crackers To make them crispy thin, use a pasta roller as she suggests, otherwise they are still tasty slightly thicker and cut into shapes or squares.

Cucumber & Cantaloupe Green Salad

Summer sweet melons and crispy cucumbers are tossed with a Lemon-Lime Yogurt Dressing. Goat cheese and pistachios add another element, but are each optional. The citrus zest makes the dressing delightful, but if you are without a microplane or fine grater, no worries, the juice is more important.
