Roast the asparagus and whisk up the dijon sauce. Sear the eggs just before the asparagus is done. Serve the eggs on top of the asparagus and drizzle the sauce all around. Toast is lovely on the side if you desire to dip up any of the yolks & sauce.

Asparagus is simply roasted and drizzled with a tangy dijon sauce. Serve it on top or alongside as a sauce to dip in.

Easy Runny Eggs

We like a runny egg yolk in my home, but sometimes flipping an egg over easy will increase the risk of the yolk breaking and inevitably cooking the whole darn thing. This method makes a simple fried egg a bit easier to master without the flipping.
