French Toast with Almond Kissed Peaches & Blueberry Maple Syrup

Dip, soak and sear the French toast. While it cooks on each side, simmer the blueberries and slice up the peaches and toss with the almonds & extract. If you have yogurt, ricotta cheese or creme fraiche, serve it alongside the toast & fruit.

French Toast

French toast can come together very quickly, even on a fast weekday morning for just a couple people. But, if you do not have 15 minutes to spare make a big batch on the weekend. Freeze individually and heat in a toaster or oven until heated through. Serve with fresh fruit and a dollop of yogurt.

Make this gluten-free with your favorite GF bread or dairy-free by using orange juice instead of milk.

Blueberry Maple Syrup

Give your typical pancake syrup an antioxidant rich topping. If you have huckleberries (I’m jealous!) or other wild berries, they will work just as well. Whatever you can find fresh is best, but frozen will work in a pinch.

Almond Kissed Peaches

Fresh sliced peaches are lightly touched with a sprinkle of almonds and almond extract. Amaretto or vanilla could work in a pinch instead.
