If you need a meal quick, this one comes together fast as long as the brown rice is started in advance. Using a pressure cooker for the rice will save even more time. Start the marinade as soon as the rice starts. Relax for a few minutes and then come back to finish the dish about 10 minutes before the rice is done.

Ginger Chicken over Snow Peas

A simple Asian ginger marinade livens up chicken which is sweetened up with a pile of stir fried snow peas. Substitute green beans, snap peas, broccoli or something tasty of your choice for the snow peas if you can’t find them.
