Ginger Kale Salad with Butternut Goat Spread, Chicken Pate and Pecan Crackers

Roast up the squash. Make the salad dressing and toss the kale salad. Blend and roll out the crackers. Bake. Saute the chicken livers. Blend the squash, goat cheese and other ingredients. Puree the chicken livers, mushrooms and remaining ingredients. Package separately to take on the go.

Creamy goat cheese, roasted squash and garlic are blended or mashed together into spreadable goodness.

Creamy Ginger Kale Salad

This creamy, bright with ginger dressing coats shreds of kale. Add a handful of nuts to complete the package. A fine microplane grater helps when shredding the ginger and the lemon zest. If using the microplane for the ginger, use half of the amount. The juicy shreds are potent! Start with about a 1 inch piece of ginger. If you do not have a microplane you can peel the lemon and finely mince the ginger. A blender will help get the job done as well.

Pecan Crackers

Pecan meal easily becomes crispy, delightful crackers. Add extra seeds and flavors as you like. If the dough seems to fall apart, just press and piece it together, cut into crackers and then bake them up. If you do not have pecan meal, blend up about 2 cups of whole pecans in a food processor until the mixture is crumbly. Do not blend too long or the oils will release and it will eventually turn into pecan butter.

Mushroom & Chicken Pate

There are pate lovers and pate haters. I am a lover. My husband is a hater. But, I may convert him, because apparently Liverwurst (aka poor man’s pate) was his first food as a baby when he swiped a scoop of it off the table and slurped it down happily. Our simple blend of mushrooms, onions & chicken livers made me swoon with joy. He tried it and claimed to ‘not hate it’. What amazes me about pate is how it is cheap and quick to make. Poor guy, marrying me means there may just be a lot more pate in his future.
