Glazed Beet & Arugula Salad with Nutty Quinoa

Simmer the quinoa. Cook the beets. Toss the quinoa with the nuts and package up to go. In a separate container, toss the beets with the arugula and dressing. If you prefer, keep these items separate as well. Toss everything together at lunchtime.

Pan braise the beets, toss with baby arugula and a crumble of goat cheese. A sprinkle of your favorite nuts instead of the goat cheese will give you a nice vegan and dairy free alternative.
