Herb Tilapia with Herb Butter, Skillet Zucchini & Potatoes & Salad

Boil the potatoes. Whip up the Pesto Herb Butter. Chop the herbs for the tilapia and cut the zucchini. Make the dressing for the salad. Sear the zucchini. Drain the potatoes and sear them. Toss and finish the salad. When the potatoes are almost done, start the Herb Tilapia. Serve a dollop of the Herb Butter on the Tilapia and the Zucchini & Potatoes.

A little butter, cream cheese and pesto already blended are whipped together to become something much more. If you have leftover pesto simply whisk in 1/4 cup into the cream cheese and butter. The rest of the instructions will be the same. A food processor or mortar & pestle are required for this spread.

Gather herbs from your garden, almost any combination will do. Basil, mint, parsley, oregano, thyme, dill, or whatever smells delightful. Try another type of fish if you like, such as trout, salmon, or halibut. Be sure to use a nice quality olive oil or butter, since the simplicity of this dish highlights every flavor that is added.
