The smoothie is the highlight of the dish, so prepare the ingredients and place in the blender. Start to wilt the greens and add the toast to the toaster or oven. As soon as the eggs are added to the pan, start the toast. Next, blend the smoothie. Serve the eggs over the greens with the toast and smoothie alongside.

Kiwi Smoothie

The texture of this smoothie is particularly fun with the crunchy dots of kiwi seeds. Make it dairy-free by using the cream on top of coconut milk instead or your favorite dairy-free yogurt substitute. Honey is optional. If your fruit is sweet you probably will not need it. Therefore, taste it before adding.

We all have a different preference, runny, easy, over-hard, but placing eggs on top of wilted greens will give an incredible nutritional boost to your morning making it brighter and shinier.

Whole Wheat Toast

Add this to any breakfast or a bowl of soup or a dinner that needs a bit more fiber. Be sure to use a bread that uses whole wheat flour as the first ingredient. Avoid enriched whole wheat flour which is basically white flour stripped of its nutrients with some brown coloring and vitamins added back in. May as well start with the real thing including the bran and wheat germ. Also, enjoy your toast with just a bit of real butter rather than a dollop of fake trans-fat laden margarine or butter lightened with vegetable oils. Just eat a bit of it and enjoy every bite!
