Peanut-Sesame Soba Noodles with Garlic Shrimp

The protein from the Peanut-Sesame sauce is enough for a main dish, but add in cubes of tofu (cold or stir-fried) or Stir-Fried Shrimp for an extra boost of protein.

If using the tofu- start searing that before you start the noodles. The shrimp on the other hand only take moments to heat up and can be prepared after the noodle dish is pretty much done.

Start by whisking together the peanut-sesame sauce. Toss with Noodles and top with Summer fresh vegetables. The high-protein sauce makes this an easy Vegetarian dish or add cubes of tofu, chicken or shrimp.
