Quinoa is a lovely grain that pairs well with flavorful vegetables. Try one or both of the side vegetables. The Roasted Carrots use their own green tops for a bitter-fragrant pesto. The beans- yellow or green work well- are coated in a silky creamy dijon sauce.

Roasted Carrots & Carrot Top Pesto

Yup- those greens that hang off the top of a gorgeous bunch of carrots, aren’t just for tossing away anymore. Blend them into a pesto and toss with their orange roasted roots.

If you are not so daring, you can make (or even buy) plain ol’ pesto, but why when the luscious slightly bitter greens are waiting for you.

Quinoa

One of the highest protein grains out there. Here is a simple preparation for boiling this happy gluten-free grain. Cook it until your preferred texture. I like it when the tail has started to uncurl and there is not much of a crunch left. In some cases (such as at higher altitudes) you may need to add more water.

String Beans with Mustard-Yogurt Sauce

Lightly steam the yellow or green beans then toss them with a mustard sauce made creamy & tangy with yogurt or half & half if you so choose. Toss in fresh herbs & nuts for a complete side dish.
