Roast Beef with Lemon Pilaf & Creamy Blue Pear Salad

Prepare the beef first. While it cooks, start the pilaf. When it is done, place it in an oven proof dish. Prepare the salad dressing and veggies. When the roast beef is done and resting, place the pilaf in the oven, increase the heat to 375, to warm back up. Arrange & dress the salad. Pull the pilaf out after the roast beef is sliced and ready. Be sure to pour any sauce from the roast beef on top of the slices for a bit extra flavor.
