Roasted Grape Chicken & Sage Squash with a Creamy Blue Pear Salad

Prepare the chicken and toss it in the oven. Sear the sage leaves. Cube the squash and spread in a baking sheet. Roast on a separate rack. While they both cook, make the dressing, cut the veggies and assemble the salad.

Roasted Chicken & Grapes

Stuffed with herbs and fresh grapes this chicken is roasted until crisp as the juice plumps up the grapes and they explode into a tantalizing sauce. Any herbs or grapes will do. The preparation time is just a few minutes to put everything together. The hour plus is based on the fact that a whole chicken will roast from 45 minutes to 1 1/2 hours depending on the size and oven.

Sage scented slightly sweet roasted squash is a flavorful simple side dish perfect for brightening up a chilly day. Any winter squash will do, but I prefer butternut since it is easy to peel and cut into cubes.
