Salmon in Paper with Beet & Arugula Salad

Start with the beets and while they cook prepare the salmon. When the beets finish cooking with only about 5 minutes left, place the salmon in the preheated oven. Toss the salad while the salmon cooks and then serve altogether. You may want an extra carbohydrate such as a cooked grain or whole-grain bread.

Glazed Beets & Wilted Arugula

Pan braise the beets, toss with baby arugula and a crumble of goat cheese. A sprinkle of your favorite nuts instead of the goat cheese will give you a nice vegan and dairy free alternative.

Salmon in Parchment

Bundling salmon and a few extras in parchment paper keeps the steam and moisture in the fish— where it belongs. We suggest a technique for neatly wrapping up the parchment, but as long as it is wrapped and the seal is down on the pan it will cook up easily.
