Split Pea Pate with Crackers and Spinach Salad

Simmer the split peas. Make the crackers. While they bake, saute the onions for the spread and prepare the salad ingredients. Blend the split pea spread. Serve with warm or cooled crackers. Toss the salad.

Split Pea Spread

Split peas are brightened up with lemon and depth is added with walnuts. This spread is a great alternative to hummus or bean dips for crackers, sandwiches, or cut up veggies.

Pecan Crackers

Pecan meal easily becomes crispy, delightful crackers. Add extra seeds and flavors as you like. If the dough seems to fall apart, just press and piece it together, cut into crackers and then bake them up. If you do not have pecan meal, blend up about 2 cups of whole pecans in a food processor until the mixture is crumbly. Do not blend too long or the oils will release and it will eventually turn into pecan butter.

Lemon Dressed Spinach Salad

The dressing is simple and therefore best if using the highest quality ingredients. Freshly ground black pepper and a fruity extra-virgin olive oil will make this salad incredible as you can taste each flavor.
