Summer Spaghetti Squash with Nutty Quinoa

Bake the spaghetti squash. Chop the remaining vegetables and nuts for the quinoa. Saute the onions for the quinoa. Add the quinoa after the onions have almost caramelized. When the squash is about 5-10 minutes away from being done, start to saute the onions and remaining vegetables. Toss the nuts with the quinoa and serve altogether. If desired a sprinkle of your favorite cheese or a dollop of pesto would be a welcome addition.

Summer Spaghetti Squash

Technically spaghetti squash practically shouts out Autumn, but since it occasionally decides to make guest appearances while summer veggies are taking their final bows, how can you not resist combining them.

Start with baking the spaghetti squash. Chop the veggies while you wait and when the squash comes out of the oven start to saute the sauce.
