A quick Peanut Sauce brings together seasonal stir-fried vegetables.

When preparing this meal start with the Brown Rice as it is the most time-consuming. Add your choice of shrimp or tofu for a bit more protein if desired. Simply toss them in hot at the end of the cooking the vegetables and sauce.

If using Tofu, start cooking it prior to preparing the Thai Peanut Vegetables.

Serve the whole meal over brown rice or udon noodles.

Thai Peanut Vegetables

A simple peanut sauce livens up stir-fried veggies. Add a protein of your choice such as chicken, tofu or shrimp which are all lovely.

There are several methods for preparing rice. Brown rice especially is a bit more time consuming as it still contains the nutrient packed outer grain. This recipe contains three different methods for preparing brown rice. Try them out and stick with the one that produces the rice just the way you like it.

These methods can work for long, short, medium or other types of brown rice.

Poached Tofu

Tofu is fabulous in stir-fry whether you avoid meat or not. Allow some time to press & drain the tofu as it adds to the texture and helps with the cooking process. This poaching method is faster than pan frying, no oil is needed and it is still flavorful.
