The soup is gluten-free and dairy-free unless you add a bit of sour cream or cheese. If you want something a bit more substantial for lunch add in the Cheese Quesadillas.
For a Vegan/Gluten-Free protein addition, add in some drained black beans.

Tortilla Tomato Soup

Great vegetable soup for the winter when fresh vegetables are scarce. Use frozen Hatch chili peppers or canned. This soup is as simple as cooking up some onions, blending everything together and then simmering until ready to enjoy.

There are several suggested toppings including avocado, sour cream, cilantro, and cheese. Use what you love and skip the rest.

Green Chili Quesadillas

Perfect as a quick snack, appetizer, or as an easy side for Mexican soups, rice or bean dishes. If you do not have fresh southwest hatch chilies available, seek out frozen green chilies. Otherwise, the green chilies diced and in a can will work too.
