This is delightful with leftovers of the Brilliant Green Enchilada Sauce. Dry out the tortillas if not already done. Prepare the tofu scramble and set aside to keep warm. Wipe out the skillet or use a separate skillet if preparing at the same time. Add oil and lightly fry up the tortillas. Add the enchilada sauce, dip each side. Add the veggies and finish. Serve with the warm tofu scramble on top.

Veggie Chilaquiles

Don’t throw away those stale tortillas! Make chilaquiles instead. Some describe these as being similar to nachos- but these are really more unique as each tortilla is coated in enchilada sauce. We take a step away from the tradition and toss them with extra veggies too. Tongs will make pan-frying and coating the tortillas a bit easier.

Tofu Scramble

Since this is just a base recipe feel free to add in any veggies that you might enjoy in a scramble. Protein packed tofu makes an easy scrambled egg-like breakfast without using any eggs. This is great for vegans, but it is also a personal favorite. Nutritional Yeast adds a nutty almost cheese-like taste as well as a vitamin boost of B’s that every vegan will benefit from.
