White Bean, Artichoke & Snap Pea Saute over Garlic Seared Polenta

If you are preparing the polenta from scratch, do this the night prior of hours ahead so it is able to chill. Also prepare the baby artichokes ahead. Slice the polenta into circles if using the tube or squares if making from scratch. Sear in the skillet. In a separate pan, saute the artichokes and white beans. Add in the snap peas in the final few minutes or saute separately. Serve piled high on top of the polenta. If desired, crumble on a favorite cheese or sprinkle of nuts.

A bit of sage, white beans & artichokes are tied together with garlic & olive oil. Freshly cooked white beans or artichokes work beautifully, but also keep it simple, with canned white beans and frozen artichokes. The fresh garlic & sage will liven everything up.
