This simple saute of white beans & greens pair nicely with the polenta and the cauliflower. Start by cooking the polenta. Saute the cauliflower and then toss together the White Bean & Kale Saute. Enjoy altogether.

Silky, creamy polenta is said to be obtained through hours of simmering and stirring. Try this method for a bit faster approach that will still produce a creamy, starchy side dish without lumps. It can be made vegan with just water or ‘no-chicken’ vegan broth instead.

Cauliflower Saute

The smaller the cauliflower is chopped the faster it will cook. A drizzle of olive oil, butter or both adds just enough flavor and fat to crisp the edges slightly. Toss this into a main dish or enjoy as its own side.

Start with bacon or simply sauté the onions in a rich olive oil for a vegan option. It calls for cooked white beans, but try boiling dry white beans from scratch to make this even more affordable and flavorful.
