Zinful BBQ Chicken Sandwiches with Baked Beans & Coleslaw

Get the barbecue sauce and baked bean sauce started first. While those simmer, slice & prepare the coleslaw. Add the chicken to the BBQ sauce and simmer. Cool. Shred. Add the white beans to the bean sauce and the chicken back into the BBQ sauce. Serve the sandwiches assembled with the coleslaw in the middle or on the side.

Zinful BBQ Shredded Chicken Sandwiches

It starts with red wine reduced and thickened into a barbeque sauce. The chicken is cooked in the sauce, shredded, sauced up and then stuffed in a bun and topped with a simple creamy slaw. This is hardly a traditional barbecue chicken, but it gets on your table a bit faster. If you have time to cook it slowly for hours on your barbecue, go for it and use this sauce to accompany it.

Baked Beans

A sweet & slightly savory thick sauce coats white beans in this traditional, yet less chemical & preservative laden dish. Start with dried white navy beans, soaked and cooked until tender or canned white beans.

Coleslaw

Yogurt or the more traditional mayonnaise work equally well in this classic salad. Vegenaise works great for a vegan variation. Try strained or Greek yogurt instead of regular for a less runny dressing. Celery seeds add a classic retro flavor, but are entirely optional.
