Start the tortilla soup. As you wait for the onions to saute, prepare the quesadilla ingredients. Once the soup is simmering, grill the quesadilla. If taking on the go, package the quesadillas in foil to pop in a toaster or convection oven or package in a microwave safe container. The soup will stay hot in a thermos or store in a ready to heat microwavable container.

Tortilla Tomato Soup

Great vegetable soup for the winter when fresh vegetables are scarce. Use frozen Hatch chili peppers or canned. This soup is as simple as cooking up some onions, blending everything together and then simmering until ready to enjoy.

There are several suggested toppings including avocado, sour cream, cilantro, and cheese. Use what you love and skip the rest.

Toss it on your barbeque or a grill pan. The simple filling between the tortillas becomes the base of an almost salad like topping of zucchini, corn and avocados. Mix the ingredients up depending on what veggies you have available.
