Alkaline Broth

 

A deeply nourishing vegan broth that will add a boost of nutrients to cooked grains, veggies, soups and more. This recipe was developed by Dr. Kaycie Rosen Grigel.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots
  • 2 stalks celery, chopped
  • 1 bunch kale, or chard
  • 5 cups vegetable broth
  • 1 cup mushroom, or another preferred veggie such as peas, cauliflower, etc)
  • ½ cup fresh parsley, or cilantro or another fresh herb of your choice
  • 1 teaspoon salt, more or less to taste
  • ½ teaspoon black pepper, more or less to taste

Serving Size: 6 People



 

Preparation Instructions

Heat oil in a soup pot over medium heat. Add onion and cook, stirring occasionally, until translucent. Add carrots, celery, chard stems and parsnip and cook until tender. Add broth and bring to a boil. Add chard leaves and other veggies and simmer 10 minutes. Add herbs and simmer another 2 minutes. Use as a hydrating snack to sip on throughout the day.
