Amaretti Crusted Ham

 

The naturally gluten free Amaretti cookies make for a beautiful, unique crispy coating for ham. Apricot jam and mustard are combine to coat on the mostly cooked ham, then the simple crust is sprinkled all over the ham.

Ingredients

  • ¾ cup amaretti cookies, crushed
  • ½ cup apricot jam
  • ½ cup dijon mustard
  • 4 lbs ham, bone in or not, spiral cut or not, your choice!

Preparation Instructions

Preheat the oven to 300 degrees.

Score the ham gently if necessary and not already done. To do this, simply draw a light line with a paring knife gently into the flesh from top to the bottom of the ham. In a diagonal direction go across the opposite way to create a diamond pattern. Insert a thermometer if you have an oven-safe option. Cover the ham with foil. Reduce the temperature to 250. Bake the ham for 2-4 hours until the temperature is about 130.

Meanwhile, combine the apricot jam and mustard. Grind up the amaretti cookies, if not already done.

When the ham is up to temperature remove the foil and rub it generously with the mustard-jam. Sprinkle it all over with the ground Amaretti cookies. Increase the oven to 350.

Place back in the oven for another 30-60 minutes until the temperature reaches 140.
