Ants in a Boat

This is my daughters request as she absolutely adores the sweet peppers that look like colorful jalapenos. And actually if you are a spice addict, jalapenos would be a great idea to try. Raisins make the perfect ants, but cranberries are also fun for ‘red ants’. We occasionally substitute hummus for a dairy-free/vegan option, too.

Ingredients

  • 3 mini sweet peppers, and/or jalapenos if you like it spicy!
  • 2 ounces cream cheese, or hummus or goat cheese
  • 30 raisins, more or less, or dried cranberries

Serving Size: 1 Person

Preparation Instructions

Cut the peppers in half through the stem. Scrap out the seeds, but leave the stems to serve as handles. Spread the cream cheese into the open pepper shell. Divide the cream cheese amongst the peppers. Top each cream cheese filled pepper with about five raisins each.
