Apple & Turkey Grilled Cheese

 

During turkey season you can use leftover turkey or your favorite deli-sliced meats (roast beef or even ham could work). Thin slices of apple add crunch and sweetness. If available, a few leaves of spinach are a delicious addition.

Ingredients

  • 2 slices whole wheat bread, gluten-free or other whole-grain bread work too
  • 1 tablespoon dijon mustard
  • 1 tablespoon butter, unsalted
  • 2 slices turkey, or more if desired
  • 1 slice cheddar cheese
  • 1 apple, small, thinly sliced
  • 4 leaves spinach, more or less

Serving Size: 1 Person



 

Preparation Instructions

Heat a skillet or cast iron pan over medium heat. Spread the Dijon mustard on each slice of bread. Melt the butter in the pan. Place the non-mustard side of each slice of bread in the butter.

Fill the sandwich on top of the mustard with the apple slices, cheese, turkey, and spinach. Eat any remaining apple slices alongside the sandwich.

Sear the sandwich on each side at medium-low heat. Press together and flip when golden.
