Asian Cabbage Wraps

 

Asian flavors enhance ground turkey or pork to be wrapped and picked up in leaves of cabbage. Daikon radish is shredded in, but regular red radishes can be used into shred or finely mince them. Napa aabbage is a bit more tender then traditional cabbage making it easier to wrap and roll, but if you can only find traditional cabbage that will work too.

Ingredients

  • 1 onion, small, finely chopped, about 1/2 cup
  • 1 tablespoon coconut oil, or other vegetable oil
  • 1 clove garlic, finely minced
  • 1 inch piece ginger, finely shredded or minced
  • 1 carrot
  • 1 daikon radish, radishes or cabbage
  • ½ lb turkey, or pork, ground
  • 2 tablespoons fish sauce , or soy sauce or coconut aminos
  • 2 tablespoons tomato paste
  • 1 tablespoon rice wine vinegar
  • 1 teaspoon red chili sauce, optional
  • 1 teaspoon soy sauce, tamari for gluten-free
  • 8 leaves napa cabbage, washed and dried

Serving Size: 2 People



 

Preparation Instructions

Sauté the onion in the coconut oil over medium heat, until wilted and almost translucent, about 10 minutes. Add the garlic and ginger. Stir until fragrant. Add the shredded carrots and daikon radish. Sauté until the vegetables are tender to the bite. If they start to stick at any time simply add a splash of water.

In a separate skillet, (or after the vegetables are done and are set aside) sear the ground turkey or pork. Once it is nearly cooked through, add the fish sauce, tomato paste, vinegar, and red chili paste, if using. Fold in the vegetables and sizzle for just a few minutes. Taste. Add more of any of the seasonings and a pinch of salt and pepper, to taste.

Serve the cabbage leaves separate or roll up and serve wrapped.
