Avocado & Pear Chicken Salad

 

Such a simple combination that will extend and brighten up a batch of leftover chicken. The dressing is simply mayonnaise with a generous squirt of lemon juice, but the magic is in-between with the creamy chunks of avocado and nearly crisp pear. This is a great place to use a tart, almost underripe pear, but if you cannot find pears easily an apple on the yellow or green end of the spectrum will also do. Chop, chop and enjoy!

Ingredients

  • 2 cups chicken, cooked
  • 2 stalks celery
  • 1 pear, slightly underripe, or a yellow or green apple
  • 1 avocado
  • 2 tablespoons mayonnaise, or olive oil or greek yogurt
  • 1 teaspoon lemon juice
  • ¼ teaspoon salt, more to taste, especially if the chicken was unsalted
  • 1 pinch black pepper

Serving Size: 2 People



 

Preparation Instructions

Prepare each of the ingredients as follows:
Cut the celery into thinner sticks and then finely dice.
Cut the pear into quarters, ideally cutting around the seeds and stem. Cut the slices into smaller pieces and chop into a dice, slightly bigger than the celery.
Slice around the avocado pit. Twist to open up the avocado. Insert the knife into the pale green flesh and cut into slices. Turn the avocado and slice in the opposite direction. Take a large spoon, scoop it all out into diced pieces.

Combine the chicken, celery, pear, and avocado. Drizzle on the mayonnaise, squirt of lemon juice, salt and pepper. Toss together to create the salad. Serve immediately or chill to take on the go.
