Avocado Mousse

 

This dessert could start your day elegantly as well with a sprinkle of granola or nuts. It is shared by Dr. Kaycie Rosen Grigel who states: This is one of my all-time favorite desserts—how can you beat delicious and bright green? The rich, healthful fats in the avocado are a wonderful alternative to the heavy butterfats in a traditional mousse.
Based on a recipe from Cooking with the Right Side of the Brain by Vicki Rae Chelf

Ingredients

  • 2 avocados, plan about 1 avocado for every two servings
  • ¼ cup almond milk, substitute soy, rice or an alternative milk instead
  • ¼ cup maple syrup
  • 2 tablespoons lemon juice
  • 2 teaspoons vanilla
  • 4 strawberries, for a garnish, optional
  • 2 tablespoons coconut flakes, for an optional garnish

Serving Size: 4 People



 

Preparation Instructions

Put avocado, milk, syrup, lemon juice, and vanilla in the blender, and whip until it is a mousse-like consistency. Place in dessert cups and top with one strawberry sliced into rounds and a sprinkle of coconut. Chill until ready to serve.
