Azuki Broccoli Stir Fry

 

Rice & beans are often reserved for latin cuisine, but this Asian twist is well worth it. The azuki bean is typically enjoyed in chinese desserts, especially as a red paste. Give them some savory love as the star of a stir-fry. Another option is to substitute small red beans or edamame for azuki.

Ingredients

  • 1 tablespoon vegetable oil (high heat)
  • 2 cloves garlic
  • 2 inch pieces ginger, finely minced or grated
  • 1 cup onion, sliced
  • 2 cups broccoli, cut in florets or small pieces
  • 1 cup azuki bean, cooked
  • ½ cup water
  • 2 tablespoons soy sauce
  • 1 tablespoon mirin, or just a light drizzle of honey or agave, to taste

Serving Size: 2 People



 

Preparation Instructions

Place the oil, garlic and ginger in a large skillet or wok over medium-high heat. As it comes up to a sizzle, toss in the onion slices and broccoli florets, toss lightly.

When the oil seems mostly absorbed, toss in the azuki beans, pour in the water, soy sauce and mirin or other sweetener, if using. Increase the heat to high and let it steam the broccoli, onions and beans until tender.
