Baked Apples with Coconut Sauce

 

This simple and warming recipe is shared with us from Dr. Kaycie Rosen Grigel. Enjoy it for breakfast or a dessert.

Ingredients

  • 6 apples, cored but not all the way to through
  • 2 tablespoons coconut oil
  • 4 tablespoons molasses
  • 2 teaspoons cinnamon
  • ¼ teaspoon cloves
  • ¼ teaspoon nutmeg
  • 1 can coconut milk
  • 1 tablespoon kuzu, or arrowroot, cornstarch, or agar agar
  • 1 teaspoon vanilla

Serving Size: 6 People



 

Preparation Instructions

Preheat the oven to 375.

Place apples in a baking dish. Cut into each apple removing the core while leaving a base. Put 1 tsp coconut oil and 2 tsp molasses or maple syrup in the cored section. Sprinkle ΒΌ tsp cinnamon, and a couple dashes of nutmeg and cloves in each apple. Cover, and bake for 40-60 minutes, until apples are soft.

While the apples are cooking, combine the coconut milk, starch and vanilla sauce for sauce in a small saucepan over medium/low heat. Stir until thickened.
