Baked Oatmeal

 

A cross between oatmeal and coffee cake- assemble it the night before and then toss in the oven while you are getting ready. Pour warm milk on top and enjoy with fresh berries. Making this dish is simple as well, since you can mix most of it in the dish it will be baked in. Frozen fruit works great in the winter.

Most oats are gluten-free, but if you have a severe allergy be sure to purchase Gluten-Free specific Oatmeal as they are not processed in plants with gluten.

Ingredients

  • cup rolled oats
  • 1 tablespoon sugar, or honey or agave, to taste
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 pinch salt
  • 2 eggs
  • ½ cup plain yogurt
  • ½ cup milk
  • ½ cup blueberries, frozen or other berries

Serving Size: 2 People



 

Preparation Instructions

Use a 6-cup baking dish (about 8×8) for 2 servings, larger when doubling/tripling a dish.

Combine the dry ingredients: oats, baking powder, salt, and cinnamon in the baking dish.

Whisk together the eggs, honey, yogurt and half of the milk.

Pour the wet ingredients into the baking dish and fold together with the frozen berries. The dish can be made up to this point the night before.

The next morning…

Turn the oven on to 375. Place the oatmeal in the oven and bake for 15-20 minutes until the oatmeal is slightly set and no longer jiggly.

Cut into squares, warm up the remaining milk (or more to taste) and drizzle on top.
