Balsamic Beet & Garbanzos

 

A tangy sweet dressing loves up garbanzos & shredded beets. Add other vegetables as they are available and even plate this on top of a pile of torn lettuce.

Ingredients

  • 1 teaspoon dijon mustard
  • 1 teaspoon honey, or agave
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons olive oil
  • cup garbanzo beans, about 1 can
  • ¾ cup beet, shredded
  • ½ cup carrot, shredded
  • ½ cup cauliflower, crumbled into bite-size pieces
  • 1 pinch salt
  • 1 pinch black pepper

Serving Size: 2 People



 

Preparation Instructions

Whisk together vinegar, mustard, & honey. Slowly whisk in the olive oil. Season with salt and pepper.

Fold in the garbanzo beans, beets, carrots, and cauliflower.

Serve immediately or allow the flavors to meld & marinate to taste.
