Basic Lemon Vinaigrette

This simple lemon dressing is a staple in our home whenever lemons are abundant. The method of pressing the garlic into the salad bowl was taught to my mother by a French family friend and it adds the perfect essence of garlic. It will thicken slightly if you whisk in the olive oil slowly while whisking to emulsify it. If that all feels like too much work, mince up the garlic and place all of the ingredients in a jar and shake into goodness.

Ingredients

  • 1 clove garlic
  • 1 tablespoon dijon mustard
  • 1 teaspoon honey, more or less, to taste, use maple syrup for a vegan choice
  • ¼ cup extra-virgin olive oil
  • ½ teaspoon salt, more to taste
  • 1 pinch black pepper, freshly ground
  • 1 lemon

Serving Size: 4 People

Preparation Instructions

Take a large salad bowl, cut the top off of the garlic and rub it all around the salad bowl, especially in the base of the bowl. If you prefer, mince it up fine and add to the bowl. Pour in the lemon juice, mustard, and honey. Whisk together.

Continue whisking while slowly pouring in the olive oil in a thin drizzle. Add the salt and pepper. Taste. Add more honey or olive oil if it tastes to tangy. If it needs more salt and pepper, adjust accordingly.
