Winter

Beef Bolognese

 

This is fancy way of saying spaghetti & meat sauce. The longer you simmer this sauce, the more the meat falls apart and the flavors meld. The addition of a few shredded vegetables adds not only nutrients but sweetness too.

Ingredients

  • ½ tablespoon olive oil
  • 1 onion, finely minced
  • 2 carrots, peeled and finely shredded
  • 1 cup red wine, or broth instead
  • 28 ounces roasted crushed tomatoes, can
  • 3 cloves garlic, finely crushed or minced
  • 1 tablespoon dried italian herbs
  • 1 pinch salt, to taste
  • 1 pinch red pepper flakes, optional and to taste

Serving Size: 4 People



 

Preparation Instructions

Warm the olive oil in a large saucepan over medium heat. Toss in the chopped onions and saute until softened about 5 minutes. Add the carrots, saute for 2-3 more minutes.

Push the vegetables to one side of the pan. Add the ground beef, increase the temperature to medium-high. Sear the beef, break it apart until it is cooked through— for about 10-15 minutes.

Pour in the red wine, crushed tomatoes and garlic. Once it begins to bubble like lava, reduce the temperature to medium. Simmer for at least 20 more minutes. Longer if you have the time.

Stir occasionally and add the Italian herbs, a pinch of salt and red pepper flakes if desired.
