If using spaghetti squash, start by roasting it. While it roasts, begin the bolognese sauce. When it does its final simmer, pull out a pot of water to boil and start your pasta from this point. While the pasta cooks, scrape out the spaghetti squash and wilt the greens. Toss the squash with the hot pasta. Serve the bolognese on top. Mix in the wilted greens or serve alongside.

Or maybe call it Spaghetti Spaghetti Squash? Either way, tossing strands of spaghetti squash with strands of whole wheat or brown rice spaghetti makes both of them taste that much better. Serve this dish anytime a meal calls for spaghetti or spaghetti squash.

This is fancy way of saying spaghetti & meat sauce. The longer you simmer this sauce, the more the meat falls apart and the flavors meld. The addition of a few shredded vegetables adds not only nutrients but sweetness too.
