Brussels Sprouts Slaw

 

Brussels sprouts in many ways are just tiny cabbages that can be shredded up and tossed with a simple dressing where they absorb the flavors to make a simple, elegant slaw. Adding slivers of crunchy nuts or even tangy cranberries or currants is a great idea. Use your preferred syrupy sweetener such as agave or maple syrup to make this vegan.

Ingredients

  • 1 lb brussels sprouts, trimmed
  • 1 tablespoon dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey, more or less to taste, or maple syrup/agave to make it vegan
  • ¼ cup extra-virgin olive oil
  • 1 pinch salt
  • 1 pinch black pepper

Serving Size: 2 People



 

Preparation Instructions

Remove any outer leaves from the Brussels sprouts, trim the tips and cut in half. Thinly slice into shreds.

Whisk together the mustard, vinegar, and honey. Slowly drizzle in the olive oil while whisking rapidly until everything comes together in a thick dressing.

Fold the shreds of sprouts into the dressing and add nuts or dried fruit if desired.
