Cashew Nacho Cheese Dip

 

This simple cashew nacho cheese dip can be whipped up with very few ingredients. The carrot add color and a bit of sweetness. The cilantro is optional, add a pinch more of the ground coriander seed if you do not have fresh cilantro available.

Ingredients

  • 1 cup cashew
  • 3 cups water, boiling
  • 1 clove garlic
  • 1 carrot, peel and grate
  • 1 teaspoon coriander seeds, ground
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder, optional
  • ½ teaspoon cumin, ground
  • 1 cup cilantro, washed and dried, optional
  • 1 teaspoon salt
  • ¼ teaspoon black pepper

Serving Size: 4 People



 

Preparation Instructions

Soak the cashews in the boiling water with the clove of garlic. Let soak at least 10 minutes, up to over night is fine. Add the grated carrots and spices. Blend for 3-5 minutes until smooth. Add a splash of water if the nuts are not blending easily.

Once it is smooth, add the cilantro and pulse until well combined.

Serve with chips or sliced veggies.
