Spring

Cheesy Collards

 

The collards are wilted, cream cheese is melted in, parmesan sprinkled on top. This is an easy take on the more classic Creamed Spinach. Substitute whatever greens you have available including spinach, mustard or even kale.

Ingredients

  • 1 bunch collards, wash and shake dry
  • 1 pinch salt
  • 1 pinch black pepper
  • 2 ounces cream cheese
  • 1 ounce parmesan cheese, grated, actually as much as you like

Serving Size: 2 People



 

Preparation Instructions

Stack the collards and roughly chop.

Heat a skillet over medium heat. Toss in the collards with a splash of water. Steam to wilt them, tossing and shaking the pan as needed. Season with a pinch of salt & pepper.

Add the generous dollop of cream cheese. Melt, while tossing lightly. Sprinkle with the grated parmesan and serve hot.
