Chicken Salsa Salad

 

This simple chicken salad is just salsa creamed up and tossed with cooked chicken. With leftover chicken it literally will come together in just a few minutes. Perfect for wrapping in a tortilla or lettuce to take on the go or between a couple slices of bread and lettuce as a sandwich.

Ingredients

  • 2 tablespoons plain yogurt, or sour cream or mayonnaise for dairy-free
  • 2 tablespoons salsa verde
  • 1 cup chicken, cooked
  • 2 leaves lettuce, or more as needed
  • 1 tortilla, corn or small flour

Serving Size: 1 Person



 

Preparation Instructions

Whisk together the yogurt/sour cream/mayonnaise with the salsa. Fold in the chunks of chicken and shredded carrot. Taste. Depending on the spicy/saltiness of your salsa season with salt & pepper.

Dollop onto a tortilla or between a couple slices of whole-grain bread. Finish with the lettuce leaves. Or skip the tortilla and just wrap up with the lettuce.
