Chipotle Goat Cheese Logs

 

Smoky, spicy chipotle is mellowed in the creamy cherve goat cheese. Roll in ground pumpkin seeds with just a pinch of ground chile or chipotle powder. Spread onto bread or crackers.

Ingredients

  • 1 chipotle pepper, dried
  • 8 ounces goat cheese
  • ½ cup pumpkin seeds
  • ½ teaspoon salt
  • ½ teaspoon chili powder, or chipotle powder

Serving Size: 4 People



 

Preparation Instructions

Simmer the chipotle pepper in water for about 5-10 minutes until softened. Skip this if starting with a canned adobe chipotle pepper.

Using a food processor, blend the pumpkin seeds and chili or chipotle powder until flour-like. Set aside.

Remove the pepper from the hot water and blend in the food processor until smooth. Add the goat cheese and blend up until evenly pink.

Shape into a log in a piece of plastic. Chill about 30 minutes.

Unwrap and roll in the ground pumpkin seeds. Serve immediately or rewrap and store for up to 4 days.
