Cilantro Chutney

 

Blend up this simple coconut cilantro sauce for dolloping on curries, soups or burgers. Add more jalapenos and ginger for a bit more of a kick.

Ingredients

  • 1 jalapeno
  • 1 inch piece ginger, peeled and minced
  • 1 clove garlic
  • ½ cup coconut milk
  • 1 cup cilantro, wash and dry
  • ¼ teaspoon salt
  • ¼ cup coconut, shredded, unsweetened
  • 1 pinch sugar

Serving Size: 4 People



 

Preparation Instructions

Place the jalapeno, ginger, garlic, and coconut milk in the blender. Blend until smooth. Add the cilantro and coconut flakes. Blend, scraping down periodically until it is completely incorporated. Season with the salt. Blend. Taste and add more salt if needed.
