Cilantro Pesto

 

A dollop of this potent pesto will add a boost of Mexican flavor and nutrients to any dish of veggies, starch and protein.

Ingredients

  • 1 bunch cilantro, washed and dried
  • ¼ cup walnuts, pine nuts or almonds, toasted
  • ¼ cup extra-virgin olive oil
  • 1 teaspoon chipotle pepper, powder
  • ½ lime
  • ½ teaspoon salt, more to taste

Serving Size: 4 People



 

Preparation Instructions

Combine all ingredients in blender or food processor and process until smooth. Keeps up to 2 weeks in refrigerator—keep in a sealed container and cover with a little olive oil to make sure no green bits stick out into the air.
