Creamy Dressed Spring Salad

 

A yogurt herb dressing laces through spring greens, slivered beets and radishes with a handful of slivered almonds, feta and golden raisins for good measure. Mix and match the vegetables you have available and eliminate the raisins or nuts if they are not for you. Your favorite creamy yogurt herb dressing will do, but for this spring recipe we prefer the Creamy Spring Onion Dressing

Ingredients

  • 4 tablespoons creamy yogurt-herb dressing, such as the spring onion dressing
  • 3 cups spring greens
  • 1 beet, small, washed and scrubbed
  • 2 radishes, thinly sliced
  • 1 carrot, scrubbed
  • 2 tablespoons feta cheese, crumbled
  • 2 tablespoons slivered almonds
  • 2 tablespoons raisins, golden or dark

Serving Size: 2 People



 

Preparation Instructions

Scrub and thinly slice the beets, radishes, and carrots. Whip the yogurt herb dressing in a large salad bowl. Fold in the sliced roots. Gently incorporate the greens, feta cheese, slivered almonds and raisins.

Serve immediately before any wilting happens. Add your favorite spring vegetables and mix & match the toppings too.
