Winter

Creamy Fruit Salad with Dates & Nuts

 

Yogurt dressing is lightly sweetened while chunks of dates and nuts add interesting texture. Use any of your favorite winter fruit. If adding banana, add at the very last minute.

Ingredients

  • 1 cup plain yogurt
  • 1 tablespoon maple syrup, or honey, more to taste if desired
  • 1 cup pineapple, chunks
  • 1 persimmon, fuyu, stem removed and chunked
  • 1 pear, cored and chunked
  • 1 apple, cored and chunked
  • 2 clementines, or 1 orange, peeled and segments divided
  • 2 dates, pitted and chopped
  • ½ cup coconut, flakes, optional
  • ½ cup pecan, crumbled

Serving Size: 4 People



 

Preparation Instructions

Whisk together the yogurt and maple syrup or honey. Gently fold with the pineapple, persimmon, pear, apple, and clementine chunks. Fold in half of the dates, coconut flakes and pecans.

Garnish with the remaining ingredients and any pretty fruit slices. Serve as soon as possible.
